For the section behind Beilngries I recommend a mountain bike, many roots.
The path on the Main-Danube Canal is (at least in this section) boring and not nice to drive because of the gravel surface.

After we last had to be overtaken by seniors on e-bikes, today we have established a level playing field. However, we were not on the senior highway, but sometimes left the valley. We passed a couple of nice and quiet spots.
And Berching is a beautiful medieval town.
Nice tour. First Ohrn, then Brettach and finally Kocher.
The cycle path on the former Kochertalbahn route is particularly worthwhile with its two former railway bridges over the Kocher.
Finally, my personal Alp d'Huez.
